Southwell Sugar Shack is a family owned and operated maple syrup farm nestled in the beautiful maple forests of northern Kalkaska County, Michigan. Located far from conventional farms using chemical pesticides or fertilizers, the mature maple trees from our sustainably managed forest produce top notch, all natural Michigan maple syrup. Memories from our grandfather’s generation include pulling sap-filled milk cans through the forest on sleds. Today’s generations of Southwells working in the sugar shack employ the latest methods and technology in maple syrup production. Using high-pressure vacuums and tubing, we currently collect sap from 2,250 taps. While utilizing the latest innovations and technology makes maple syrup production more efficient, it does not have to mean a sacrifice in flavor. For that reason we still fire our evaporator with wood, which lends our syrup that rich, distinct flavor only found in the finest of maple syrups.
